If you are trying to stay away from carbs, and social distance but still trying to stay chill - try freezing lemons.  Cut them up, put the wedges in a freezer bag and voila you will have lemon wedges for 3 -4 months. Try frozen fruit.  Perhaps try chunks of frozen fruit are a refreshing treat on a hot day.  Just spread your favorite fruit be it pineapple, banana slices, berries, etc. on a cookie sheet and freeze it for a couple hours.  Once set, cut into squares, and toss into a freezer storage bag.  The fruit should keep for 8 – 10 months. Great for quick snack or throw into a blender for smoothies. If you have avocados, and they all ripen at once, chop them up or mash them, squeeze a little fresh lime and pop them in the freezer.  You will have guacamole at the ready!
