A Taste of the Old World

If we have learned anything from our time living in Bend Oregon, it is that there is not a lack of amazing cuisine in this great city. Our latest venture took us to one of Bend's newest restaurants, and their take on Old World style French and Italian specialties did not disappoint. Bosa Food & Drink is located in the old Bakery Building in the Galveston corridor and is a destination we will be going back to.

We began our meal with the Crostoni and the Meatballs. The grilled sourdough bread of the crostoni was perfectly grilled and crunchy and the simplicity of the sweet pea and white bean hummus paired so wonderfully with the pecorino and summer truffle. The meatballs on the other hand were so perfectly rich and the simplicity of the tomato gravy just enhanced the flavors of the perfectly prepared meatballs. 

Our dining experience continued with the grilled summer squash and two pasta dishes. The squash was expertly grilled to a wonderful texture and the sage-brown butter really stepped up the flavors in a potentially bland dish. We loved every bite of this dish. For pastas we went with the Bigoli and Tagliatelle and WOW, these dishes were exceptional. The Bigoli was simple, rustic, and a blast of flavor. The beurre monté sauce, cracked peppercorns, parmesan, pecorino, breadcrumbs and parsley was so simple, yet such a perfect combination of elements that did not overwhelm our palate. The Tagliatelle on the other hand was such a wonderful, rich dish with the perfect balance of beef and pork in the ragu and just the right balance of spice to add some complexity. We were pleasantly surprised with how these flavors all came out in dishes so simple. 

To finish off our evening we tried the buttermilk panna cotta with strawberries and this dish was gone before we could get a photo! The buttermilk led to a desert that was not overly sweet and was a great break for the palate after the rich and savory pasta dishes. We appreciated the care and simplicity that went into this simple desert and are looking forward to trying more.

Overall, BOSA gets two thumbs up and we are excited to make our next reservation.
