Southeast Floridas Favorite Holiday Key Lime Cookie

Step outside your favorite holiday cookie comfort zone and try the recipe that Southeast Floridians have selected as the favorite cookie to serve at holidays.  The holiday cookie fan favorite is the Key Lime Pie cookie, or the Key Lime Pie sandwich cookies filled with a tangy cream. The cookies are soft, buttery graham cookies with a  tangy key lime-flavored icing on top or cream in the middle.

Picking a favorite cookie seems like a nearly impossible task, but somehow every state in the US has managed to have a different cookie listed as their state’s top cookie. Some remain loyal to the original chocolate chip cookie and sugar cookie while other states prefer a nontraditional cookie.  Give the nontraditional holiday cookie that Floridians enjoy.  It’s a simple recipe.

Key Lime Pie Cookie Recipe

Ingredients:

Graham Cookie: 1 Cup of unsalted butter (room temperature)

 1 ½ cup of brown sugar

2 teaspoons of vanilla extract

2 cups of graham cracker crumbs

1 teaspoon of baking soda

2 cups of all-purpose flour.

Key Lime Butter Cream Filling: ½ cup of unsalted butter (room temperature), 1 tablespoon of lime zest, 3 tablespoons of fresh-squeezed lime juice, 4 cups of powdered sugar.

Directions:

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

Mix all the cookie ingredients together and scoop the cookie dough onto the baking sheet.

Place the cookies in the oven for 9-10 minutes or until the edges are lightly golden.

While the cookies are cooling, prepare the buttercream filling.

Once the cookies are cool, decorate the cookies how you wish with the key lime pie icing and enjoy.
