Cooking While in Quarantine: Recipe Ideas

If you are having a hard time getting all the groceries you need, or are simply trying to avoiding leaving the house. Here are some quarantine recipes you can prepare using only items from your pantry:

Rice and Bean Burritos

Want something to go with your Mexican bean salad? How a burrito! Budget Bytes' make ahead bean and cheese burritos can be made without the cheese if you've run out but still packs a lot of flavor with the seasoned rice. Or instead of a bean salad side, liven up some canned refried beans with spices and lime juice!

Tuna and Noodles

Add creamed tuna (recipe here) with 10 ounces of egg noodles, cooked. You can eat it just like that – or put it in a Pyrex dish and cover it with breadcrumbs mixed with melted butter or crushed potato chips and grated cheese, and bake uncovered 20 to 25 minutes until the top is crisp.

Shakshuka

Canned tomatoes, spices and poached eggs are the main ingredients in this Mediterranean dish. Don't have eggs, cheese or herbs? You can skip for a modified (and vegan-friendly!) version. If you want to make it a little more hardy, Recipes From a Pantry's easy shakshuka bulks up the base with potatoes. Or try adding beans for a bit of added proteins.

Pumpkin Cake

Yes, you can even make dessert with items from your pantry! Yummly's pumpkin cake only has two main ingredients: a box of cake mix and a 15-ounce can of pumpkin. Adding pumpkin pie spice, vanilla and cinnamon are also recommended.

Tuna Mac

For a cheesier spin on tuna and noodles, prepare a box of mac and cheese (or make your own if you're really feeling fancy/have the supplies) and add your creamed tuna for a protein-packed mac. Add one (or all) of the topping options from the recipe above and bake for a delicious crispy layer.
