If you have the joy of celebrating a special mom in your life this year, treat her to a special brunch!  We’ve made it easy with two recipes that are easily customizable to fit her taste.

Dutch Baby: Serves 4-8

A mix between a pancake and soufflé, a Dutch baby is a great (and impressive!) way to feed the family without all the flipping at the griddle.  Here’s our favorite recipe:

Ingredients:

Mix all ingredients except for butter together in a blender.  Heat an oven-safe skillet in a 425° oven for 5-7 minutes.  Melt butter in skillet and ensure it has coated the bottom. Once melted, pour in batter and place skillet back in the oven for 15-20 minutes, or until it is puffed and lightly browned.

Cut into wedges and serve it up right from the skillet. Top with berries, powdered sugar, maple syrup or a squeeze of lemon.  Enjoy!

Easy Egg Casserole: Serves 4

Maybe a savory breakfast is more up mom’s alley! An easy egg casserole is customizable and doesn’t require much prep work.

Ingredients:

Preheat oven to 400°.  Coat an 8×8 inch baking dish with non-stick spray.  Crack eggs into a large bowl, add half and half and whisk till frothy.  Add salt and pepper, cheese, and any additional extras if desired.  Pour into prepared dish and bake for 25-35 minutes or until the center is puffy.  Cool before serving.

Serve up one (or both!) and enjoy treating the special woman in your life to a delicious breakfast.  Happy Mother’s Day!
